During my Meat lockdown 🤣🤣 I learned that I really could eat FANTASTIC yummy food. I have never really LOVED pizza. I could go a really long time without ever eating it. Perhaps because when you eat pizza at restaurants it does taste like it was a produced product rather than fresh hot out of the oven so to speak. So here I was minding my own business when I started to watch Jamie Oliver here I couldn't believe how easy this recipe was...I made it but without the sausage, it was instant love, it was my Saturday treat. Of-course this has since evolved 😉
My take on Wangeci's Veggie Pizza - I don't always measure, I wait until the ancestors tell me that's enough. Everyone's palette is different!
You can either buy ready made pizza dough, use the above Jamie's recipe or another fabulous recipe here which I use when I have guests coming over.
No need to re-invent the wheel - store bought marinara sauce or if you have the time you can make your own, you won't regret it.
Good quality Mozzarella, cheddar, feta and parmesan (high cholesterol here I come)😧
Onions 2 of each (Mix white and purple) size matters 🤦♀️
Spring onions ( a couple of sprigs)
Punnet of Mushrooms
Sweet peppers (1 red and 1 yellow)
Garlic (2-3 cloves)
Ginger (size of 2 - 3 cloves)
Lemongrass (3 sticks of the bulb)
Basil leaves (best if fresh)
Rosemary (best if fresh)
Light soy sauce - not all soy sauce is created = (2 - 3 TBSP)
Oyster sauce (2 - 3 TBSP)
Honey (1 -2 TBSP)
Chilli flakes (Optional)
1 pizza tray
1 cooking pan
Olive oil for pizza pan
Mix your dough as per any of the crust recipe's above. The first one has a rest period of about 20 minutes. The second dough mix I usually leave for about an hour.
Once the dough mix is ready, cover and put aside, you may start cooking your ingredients.
In a pan
Fry a mix of onions
Add all the mushrooms
Fry until all water has evaporated then set aside
Using the same pan
Fry the remaining mix of onions for about 2 minutes then add chilli flakes, fry for a further 2 minutes then add garlic, ginger and lemon grass. Fry for a further one minute and then add soy sauce, oyster sauce and honey.
Simmer and continue frying for about 10 minutes, if it reduces too much, add some water
When everything looks like a limp ummm 🥒where was I.... Sprinkle the spring onions
Turn off the hob and add this mixture to the mushroom mix and let it rest.
Very IMPORTANT! Oil the pizza pan with olive oil - on this particular day I forgot🙄🙈🍷
Pound (I'm feeling so naughty🙈) the dough. Just kidding, knead it in your pizza pan and make sure it covers every inch (All seven of it) oh ishhh where did that come from?? blame it on the a-a-a alcohol 🍷
(Spooning leads to forking😉) the marinara sauce and mushroom mix
Layer the sweet peppers
Add some bits of feta
Add the Rosemary
Grate the 3 cheeses - you can never have too much cheese
Place the fresh basil leaves on the top (these were a total disaster, totally charred)
Pop into the oven for 12- 15 minutes
